A Simple Cozy Meal

For supper tonight Christopher requested a shepherds pie, but he also wanted a broccoli casserole so that's what we're having, simple yet filling.

I love having shepherds pie simply because it's just so easy to put together and it's got Dan's favorite ingredients in it, ground beef; potatoes and cheese!

Our Shepherd's Pie

  • 1 lb ground beef, browned
  • app. 6 med. potatoes, peeled, cooked and mashed with butter & salt
  • a hunk of cheddar, we shred our own and they like a lot of cheese
put ground beef in deep baking dish, pile potatoes on top, put shredded cheese on top and bake until cheese is melted.

Our Broccoli Casserole

  • 1 bag frozen broccoli (we prefer fresh but can't always get it)
  • 1 sleeve Ritz crackers
  • 1/2 lb Velveeta
  • a bit of butter
Cook broccoli, drain and put in baking dish. Put little pieces of Velveeta all over, sprinkle crushed crackers over and dot with butter, bake until bubbly.

Normally we would not make these two together as it's quite rich, but it's a simple meal and as we had a late lunch we'll only be having small servings of each.
For dessert we might have a clementine, they're so good right now!

I love meals that we can throw together with things we already have in the pantry and of course I love one dish meals, very easy once you get everything precooked, then we just have the baking dishes to wash. We don't use our dishwasher so we like to keep our dirty dishes to a minimum.
